This 126-page curriculum guide is designed to teach basic nutrition in adult education classes. It includes a bibliography, a nutrition quiz, four curriculum chapters, and a collection of healthy recipes for different cultures. Each curriculum chapter contains pre-reading questions, student writings, a narrative section, comprehension questions, classroom activities, and writing assignments. The topics covered in the chapters include digestion, health and disease, components of food and the food pyramid, tips on shopping, cooking, eating out, food fads, and guidelines for good nutrition. It was field-tested in adult education classes and found to be most useful with students who read at a fourth-grade level or higher.
